Ingredients needed:
- 1 kg of flour
- 2 eggs
- 5 small spoons of cooking oil;
- Add Water and Salt as Needed
- 600 grams of spinach
- 100 grams of feta cheese

- (Optional) 200 grams of bacon

Filling: chop the vegetable and fry it on oil for a while.

Prepare the paste: Divide it into two pieces and then each piece divide into 10 equal pieces. Make a "kora" of each piece. "Kora" is a thin peace of paste made by rolling tin. Spread some oil on each "kora" and put one "kora" on another until you use 10 for one big "kora" and the other ten for another big kora.

One "kora" should be bigger than another. Take the smaller one and put it at the bottom of a saucepan. Spread the filling. Put the other "kora" (the bigger one) on the filling and place it nicely. Pour some oil on top.

Put the saucepan in the oven. Bake it on temperature of 250C for 15 minutes and then reduce it to 180C for the reamining 15 minutes. Enjoy!

Making dough and filling is hard to measure you just learn by trial for spinich and cheese zelnik i use 3 spinich 8 eggs and cheese you put how much you want roughly.

I think the paste is a mixture of Greek Feta with 3 egg, 10 cups of Spinach, 500 gr of Ricotta, 200 gr Fetta cheese (usually Bulgarian) and quite bit of Olive oil with inexpedience as as well as brushed onto the Pastry sheets. Usualy 375 gr Fillo Pastry Sheets is enogh but depends on the size of a baking dish .

5 cups flour 
1 tsp. salt 
3 tbsp. oil 
1 egg 
1 tsp. yeast 
2 cups water 
Put flour,salt in mixer. Dissolve yeast in warm water,add egg and oil, whisk. Add to flour mixture. With dough hook knead for 4 minutes. Put dough on floured surface and knead till not sticky. Dough should be soft. Divid into 10 pieces. Shape and pull slightly one at a time puttin crisco in between each piece. Make one stack of 6 and one of 4 pieces. press the edges of each stack together. Cover with towel for 25 minutes. Take one stack and roll out to 1/4 inch thick and put crisco over entire surface,turn dough half by in and other side in,then roll up and pinch. do same with other piece. Cover and let sit 25 minutes. Roll 6 layer first to fit a large buttered sheet pan,add filiing and sprinkle with butter.Put crisco around edge of dough. Roll other piece the same way. Cover filling. Roll up edges around the pan and brush with melted butter. Bake at 325 degrees and 45 to 50 minutes or until browned nicely. 
Cheese filling;30 Oz. of Michigan Cottage Chesse or regular drained in a sieve,4 eggs. 
Spinach filling;2 frozen spinach, thawed and squeezed, i med. onion, chopped and sautee\'d. Add spinach and fry for 5 minutes with olive oil. Cool add 1 lb. cottage cheese and 3 eggs, salt to taste.

I have uploaded a detailed recipe of the way my mother, and now I, make Zelnik. Being detailed it contains all the equipment and ingredients you will need and photos and instructions of what to do. It will take half a day for the first attempt so make sure you give yourself enough time but you will get quicker each time. There are many ways to make Zelnik and there is no definative version that is right or wrong, they are just variations on a common theme. Enjoy!

Filling recipes
My mother in law introduced me to Zelnik 13 years ago however she never would give up her recipe, 
The pastry is not the problem in making its the filling. 
My husband enjoys the spinach filling could you please help!!!

Filling recipes
Anther way my Baba made Zelnik is to spread the filling over a finely thinned out kora and then roll it up into a long piece. She then coiled it into a large round pan to bake. Great texture. :)
